First boil of 2010 is now history.:) Sugar content a little better than last year. I got 43 to 1 yesterday; last year it was 52 to 1. Sugar sand up a little but the clearity and color of the finished syrup was excellent. Grade A fancy!
Boiled to 71 brix.
37 taps produced 52 gal. Sunday. Slower yesterday but should pick up tomorrow, and gushing by Saturday.
