I'm relatively new to Sugaring, This is my third year. This is my first post, so please excuse any rookie protocol mistakes.

We have a new evaporator on a barrel arch. Still figuring it out. Today I boiled, and by the time I got it up to temp it was dark as night. Finished it in a large pot on the propane cooker. Filtered it with several paper filters and a fabric filter. It tastes ok, but man is it dark (like mid April Sap). I wonder if it just cooked too long and caramelized some of the sugar. Any thoughts?

How much sap did you cook and for how long?
Sounds exactly like my first boil, what a blast that was.

I'd say about 30 gallons and it took close to 7 hours.

Here are some photos. Today's oil is on the left (larger jar). Yesterday, is on the right.17767

What temperature did the sap get to? The warmer it gets and the longer it is at the warmer temperature, the darker the syrup it will make.

I stayed below 219, but I may have a hot spot in the pan. I shut down, and cleaned out the pan. Tomorrow is another day.

If it tastes good, what's the problem? I could sell dark syrup all day long.

I think Dave was asking how warm and for how long did the sap get before your started to boil.
