John NJ had a lot of helper/visitors this weekend and we all tasted the different syrups! Really interesting how they all have a different flavor,the reds have a total different flavor just as different as the box elder to the sugar maple,very good! Lots of fun and another day today since I'm off.

What a long weekend including president day Monday finished 9+ gallons in two batches,420gal of sap about,now to filter n jar tomorrow not done!,could use a break with this weather coming or maybe a short season with 70 in the forecast?? The ground may start to warm up n the peepers might not be far off will see? So far I made about 12+ gallons and lots of wood missing!

Very cool about the tasting. What do you use to cleanse your palate between tasting each syrup? I have heard that dill pickles are good for that.
You got alot done! I have a 3 or 4 gallons to finish after the last several days. I processed the 110 gallons from yesterday today, and washed out the sap tote. I did not turn on the vacuum today didn't get a drop of new sap.
Tonight it freezes and I'll see what comes in tomorrow, but I am not going to turn on the vacuum tomorrow either. Thurs Fri and Saturday are supposed to be 65 degrees or warmer.

It was just a mixed up thing while eating and wasn't asking for a reaction,we all could taste differences in all the syrups nothing scientific,23 here so I guess I we will have more work!
