Over cooked a batch what do I do?

When we finished off a batch, we waiting just a little to long. When we poured it into the jars it crystalized. It tastes good, but any thoughts of what to do with it? It was the prettiest color I had ever made! We have about 300 gallons to cook yet just off this last run, so we have plenty to work with and the season just started

Add a little water to dilute it back and heat it up again to bring it to the correct density this time.
