Notice the the wheel rim turned flower bed for the door...it actually gets a nice draft going, lines with fire brick, concrete filled with sand.....about 5 gph ......i'll need to make some changes when i increase to 70 taps next year

Do you have anything piled in the back to force the heat up against the pan? I would pile sand, bricks or something in the rear to force the flames up to the pan. Then get a squirrel cage fan and blow directly into the flames.. This should make your boil off rate up near 10 gph, with little bit of effort.. oh you will use more wood though. But practically double your production rate..

I have fire brick forming a ramp up to the smoke stack but the angle is slight, I might try and make it steeper next year, might force it to the pan better. 10 gph would be nice...i might rig up a blower too.

I feel the blower is a must, the difference between my pan naturally aspirated, and forced air is amazing to watch.

The wind on Sat. was comming from the north west and blew right into draft....natural blower I was booiling about 7 gallons an hour or instead of my usual five gph

Just think what a fan would add to the equation?
