    Default Valuable lesson

    I learned a lesson yesterday.
    I had a pan about halfway full with mostly unfinished syrup I left over night. No warming tray on top. Can you guess where this leads? Boiling away watching temps and as it got close I got ready. It got close fast so I started drawing off. Of course the fire wasn't down as much as I hoped and I burned about a quarter gallon. I know better or should have known better than to empty the warmer. Or in this case it would have been a cooler. Anyway it was mostly just time lost and a self induced kick in the pants. I'll clean the pan this afternoon. It soaked in a vinegar water bath over night.

    My first reaction was purely negative but that only lasted a minute. It was a lesson. I know I'll not do that again, I'll make other mistakes of various importance. Sap is still flowing and there are no buds that I can see. Fingers crossed for another day or two. Thanks for the encouragement.

    I was reading in the shed Tuesday evening finishing a small batch when the smell got super sugary. Same thing happened. Only about a quart. I threw cold water in the pan and bottled the slightly scorched product: Taste is almost like molasses. I’ll use for cooking my Maple Pulled Pork and Candied Yams!
    2023 Blocks, 2 steam pans, 5 taps, 1 gallon
    2024 Blocks, 3 steam pans, 30 taps, 3.5 gallons
    2025: new shack, new Halfpint, 40 taps
