    Default Newbie to making syrup

    Looking for some guidance on a few things, haven’t had a part in making syrup since I was a kid and looking for some pointers. I tapped 10 trees today, and I don’t know how to be 100% certain they are all maple trees. Also, I have a pan I would like to use for boiling sap, but would like a recommendation for a propane burner big enough to heat it. I will attach a picture below. Thanks for any help!

    The chips coming out of the holes should be white. If it were an oak the chips would be more orange or yellow...and will not produce sap (I know from experience). Almost any kind of maple will produce maple sap including box elder. I did not get any sap out of my crimson maple though. It is the kind that has dark red or purple leaves all summer long. It's easier to identify your trees in the summer and fall and mark them so you know when tapping in early spring.
    For a propane cooker look at a turkey fryer or multi burner camp stove.

    That's a good answer from Dan. I think if I had that pan and was in a hurry to figure out how to heat it up with propane (you know, if I already had some taps in and the sap was flowing), I'd grab a 150,000 or 200,000 btu double-burner turkey frier stand. I am not 100% sure that would get a vigorous boil (you'll have to get back to us on that!)... I think it would... but can't say for sure. I do know it is mind-boggling how much heat it takes to boil water. But, with just 10 taps, you'd get it done. Good luck!

    By the way, I have some norway maples including the crimson king cultivar tapped, and I'm getting sap, but they are more reluctant for sure. Takes a bigger temperature swing, and they overall produce less than half the sap as sugar maples in my experience. They started running about a week later than the sugars this year. Sugar content has been not too far behind the sugar maples though.

    Okay so every tree I tapped, when I tapped they immediately started spilling sap.. and I believe all the chips were white when I was drilling.
