Hood, draft

Hey all!
I have a 2x6 drop flue rig that's going to produce lots of vapor and it's located in a 10x20 steel-roofed shed with a 12-12 pitch. The shed is open on all 4 sides and has 9' tall walls.
Q1.Without hoods, will there be excessive condensation dripping all over everything including into the pans?

I have a scorched 4x6 syrup pan that I was thinking of inverting and suspending as a hood over the rig and fitting with some round, galvanized, 8" ductwork to function as vapor stacks.
Q2. How many of these 8" stacks should I install into my "hood" to vent the vapor from a 2x6?
Q3. Will I get adequate draft if the stacks have 2-90' bends if I get at least 12' overall height?
Q4. Will the "hood" vent adequate vapor if it is flat rather than peaked?

i made a homemade hood for my 4 foot flue pan ( that sat tight on the top of the pan lip) with 1 - 9 inch stainless stack about 8 feet long with flip cap ( was new, unused smoke stack for a evap) and it boiled the flue pan harder and vented to vapor like a chimney on fire and my operation is under a 5/12 metal roof car port off the side of my building that was open on 3 sides now only 1 with little to no drip age

U can make a hood out of pic and plastic sheeting if u need. Many hoods made like this. It's just to collect the steam and concentrate it so to speak. The higher the steam gets the colder then condenses.

about three hours into your run condensation will be dripping all over you. my flu has a hood but no stack my syrup pan has no hood but need to get one this year or make one like ADK said. putting ceiling in sugar house need all steam out now.

My only experience with a flat top hood was on my Half Pint and it was outside, under a vendor's style canopy. It had a 2' stack. Everything since then has had a peak style hood, however the current one and the previous one have/had a flat section big enough to put the stack into.

yes maple flats is right on defining the need to be peaked. if you have a Bascom`s , leader, cdl,.... catalog look at the pictures of the hood they have . that's where my idea`s started, I would look at the pics of the hoods & get excited about getting one.... then I looked at the price . shortly after I called my local metal supplier and ordered up 1-4x8 sheet of aluminum and bent it all up nice and neat on the siding break and pop riveted together . all said and done less than $250 including my time ( 3 hrs ) others have great ideas also mines is more of a factory influenced style

Did your flat style hood on your Half Pint collect the vapor and exhaust it? Or did it cause vapor to condensate and drip back into the pan?

When the vapor exits your hood does it condensate on the underside of your sugar house roof and start dripping all over you?
I'm not 100% sure on what you mean by "putting ceiling in sugar house". Did you mean "hood"? I've never been in a sugar house with a ceiling.
