    Default Question about steam hood

    We had a new steam hood made for our flat pan evaporator. It is 6 inches wider than the pan, and it's the same length as the pan. But it does not remove all the steam. Does the hood have to set down tight on the pan to work properly? The steam pipe is ten inches in dia. Any advice would be appreciated.

    No it doesn't have to be tight on the pan. Only time it helps to have it tight on the pan is when you have a preheater in the hood. Many have a hood hung over their syrup pan so that they can see whats going on all the time.
    If you want to get more steam to go up through the stack the best thing would be to get a fan mounted in the stack. Or else go to a larger size stack
