What size are you looking at making? How many taps will you be putting out?
How many hours will you have to spend boiling the sap? Will the tree be on vac?

These are questions that you will need answered before building your evap. That way you will know what size to build.
I had a 20x32" barrel evap that I made that would do about 6gal/hr all day long. Now I have a 24x60" raised flue that will do 25gal/hr.

So you need to find out 1st how big you want to end up being.
