Recipes with Maple Syrup!

Hello all maple enthusiasts!!
I am currently taking a Science of Maple Sugaring class at the college I attend. For my semester project I am putting together a recipe book of all of the different types of food and beverages that include maple syrup! As my school is looking into potentially publishing this book I am wondering if anyone would be willing to post any of their recipes with their Name (can be the name of the farm, first name, last name.. whatever you are comfortable with) & Location (can just be as simple as the state). If you would like to help me out I would greatly appreciate it!!! I hope you all had a great season

Maple Sponge candy

Boil 1 cup Maple Syrup to 300 degrees
Add 1 table spoon Baking Soda
Stir till it foams up
and pour into a pan to cool
If you like small neat pieces wait about 2 minutes and you can score the candy with a knife.When it hardens just snap of a piece
