    Default my first 5 taps

    Put in my first 5 taps on Feb.6,2009!!! I think my sugar content is least than 2%. I have made about 80 ounces of syrup and a couple of pounds of candy. I have collected about 34 gallons of sap. I am a turkey fryer and finishing off on the stove. I notice in the last 5 jars there is a white substant in the bottom. that is very thick. I filtered it before putting it on the stove. Should i've filled it after it was done also? The taste and color are great!!

    YES always filter if you bring finished syrup to a boil. The suspended minerals /sugar sands will show up every time.

    I let the finished pot of syrup sit for 2-3 days to the nitre settle to the bottom, then siphon the syrup to another pot on the floor and break the siphon when I start get the nitre in the tube. My third batch last year had a lost of nitre in the jars, one was about half nitre, but I siphoned on the last fouth batch and had almost no nitre in the jars.
