    Default First go at maple sugar

    Went pretty well. I probably did too much on the first try (1/2 gallon of sap). Came up to temperature quicker than I thought it would and the change to sugar happened quickly in my kitchen aid.

    I’d probably try a quart or pint next time as it clumped in the bowl as it changed. I had to run a bunch through the food processor to break it up.

    Glad it worked out. If you’re looking for advice, I would stick to small amounts because it’s easy to blow up a standard kitchen aid (speaking from experience). Also, best results are had by adhering to the guidelines for syrup sugar composition and finishing temperature outlined by Cornell.
