Anyone successfully make good maple cream on a hobart mixer?
I have not. Maybe just not tried hard enough?? One time I tried and it came out way to grainy! Haven't tried to make any lately with the Hobart.
Not sure what type stirring paddle might work? Always open to suggestions.

It can be done! I tried it once just to see how hard it would be on the machine. We have a 20 qt hobart. I did a 2 gallon batch and had to make sure it was room temp. 70 degrees ish. I put the Hobart on speed 1 and used the paddle (not the whisk, and not the dough hook) It did take a little work, but cream came out, but if you can spring for a cream machine, then that's way easier to dispense the cream in the containers.
I'm not sure how smaller hobart's would handle it, because it did make my 20 work a little.
