Just wondering if there was a certain number that you stop at when selling dark syrup. It seems to me when you get down to 11 the syrup is sweet, but I do not notice the maple flavor as much. Maybe I will feel differently when I taste it tomorrow.

Maybe I should just mix it with some lighter syrup
keep it separate for now. later in the year you can blend it or sell it as is but dont stop making syrup till it shuts off/gets buddy/or turns sour
