With Maple Syrup being 66 BRIX at 60 degrees F, Maple Syrup should theoretically have a sugar content of 17.91 grams per two tablespoon serving.
How can Brix be 66% and still have 24 grams of sugar (or 80.5%) in a 29.8 gram serving?
I've never seen a label that says 2 tablespoons of maple syrup is 29.8g. 2 tablespoons is 29.6 milliliters, not grams.
That said, if it did actually have 24g sugar per 2T, that would equal only 60% sugar. Most nutrition labels I see say 27g per 2 T. However I have seen an older labels that state: "27g carbohydrate" and "24g sugar". Exactly what that non-sugar carbohydrate is supposed to be, I don't know.
