    Angry Why is it?

Why is it that you spend thousands of dollars on new equipment i.e. evaporator, filter press etc. and when you receive them, which you are absolutely lucky to before the season if you order the previous May, that are NO instructions at all! Rant over.

Agreed, the maple companies are major offenders on that point. Luckily you have this forum and Proctor Maple Research to help. Proctor has many videos and how to write ups to help, and we can usually help, but it certainly can be frustrating the way maple manufacturers fail to print owner's manuals on their equipment.
Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.

Sounds like you need to use a better dealer. When selling new or used i do a start up, step by step with the new owner unless they are comfortable with the equipment.
