Any reason I wouldn't be able to use this old, bladder-less well pressure tank as a head tank for my sap setup? It's 80 gallons!

That likely has rust inside. Besides the head tank should be cleaned daily, how would you be able to clean it?

Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
Your better off finding a used plastic 55 gallon barrel. There are places that sell them pretty cheap and you can find ones used for food products. I used to get barrels from a wine bottling place and most still had some wine in them. They cleaned easy and I felt good about their safety. Most of them had a liner in them.

From the picture, it looks like it's upside down and has a drain and 3 legs. If so, turn it over, cut the top off, look inside and see what you have.
If it's rust free, you might be able to make it work until you find a better tank and it'll be easy to clean with no top...
