    Default First boil of the yr??????

    Hello everyone,
    Been making syrup for 10yrs now. But have a question is it best to hold off sweeten the pans till I have enough sap which is around 400 gallons or to start once I have enough to boil for several hrs. I’m just trying to keep from making really dark syrup. So what are the thoughts on it?? Thanks for your time cpmaple
    100 buckets for 09
    180 buckets for 2010
    300 on gravity and 300 buckets for 2011
    1000 total for 2012
    250 taps on shurflow pumps
    G.H.Grimm 3x10 raise flue auf
    snowmobile and grizzly 660 four wheeler
    8 beagles an 1 aussie shepherd for company
    and last a wonderful companion that lets me do all the stuff i love (maple sugaring) and doesnt ask questions!!!!!!!!!!!

    personally i'd boil when it was fresher, the sweet will come when it's ready. At least boiling it keeps it from degrading or spoiling
