    I did this one year. I seem to recall it turned out nice and the pans just needed a thorough rinsing. As far as length of time I believe you need to let it sit for several months for the acids to work their magic.. so don't do it in the house or garage.. it smells pretty ripe by the time it's done!

    Thanks Paulslund. Hmmmm. I think we’ll just clean everything now and be done with it.

    And another 150 L sap last night and another 100 L this morning-can tell sugar is dropping though-taking forever to boil down.
    Rebuilding maple bush from over 100 years of use and abuse
    Lots of bees and woodenware building.

    Working hard at self-sufficiency and small business.
    And still have a day job to pay for the hobbies lol.

    Boiled off my 300 gallons from yesterday. Quality still good and no sign of buddy flavour yet. Brought in another 150 gallons today with assistance of the vacuum pump but looking cloudy. Looks like a small freeze tonight so maybe another small run tomorrow, hoping sap quality holds but that will definitely be it. Then the work begins....the cleanup.

    This is how I do it every year. Leave it about a month. Usually about the long weekend in May when I get around to cleaning it. Works great but smells awful!

    It's looking like today might be our last for this season. We've been getting decent sap for the last week but sugar content has been way down at 1.5-1.7%. We had a small boil Saturday to clean up the sap from the previous three days. Sunday we woke up to almost full tanks (and one running over) even though it was barely above freezing all night. The syrup started on the low end of dark and ended up as 54LT with great flavour.

    We did get a light freeze Sunday night and had 3000 gallons in the tanks by sunset yesterday which was looking pretty decent. We'll start to RO it by noon today and push it through along with today's sap.

    I'm definitely seeing the usual signs of the end of the season. Even though we're getting decent weather the sap is slowing down. The peepers have been out since the end of last week and the ice is off Bennett Lake. Our sugar bush roads are drying out. The sap sugar content is way down and the sap in the tanks is getting cloudier, the syrup is foaming more in the pans and is more difficult to filter.

    Overall it's been a decent year considering others had a terrible one. We'll be down about 0.2L/tap from what we've been averaging the past 5 years. That reduction is almost entirely attributable to the poor sugar content in the sap.

    Man! I can't even fathom what 3000 gallons of sap looks like! LOL

    Got about 20L overnight that test boiled fine this morning.. so going to see what I get during the day today and likely have a late evening boil.. I don't want to wait until tomorrow even though it's going down to 1, it's only going to be below 6 for about 10 hours during the night and warm up fast.. might be over thinking it.. I ended up having enough wood for a small boil (4-6 hours) left from Sunday's 13 hour boil.

    I'm toying with the idea of getting a used large freezer.. thought is to have the collection barell sit in the freezer (if that's even possible) and have it cycle on and off so that the sap will stay cool (but not freeze).. maybe even figure out the correct cyle to "slightly" freeze some water out too!

    But after this last boil..that's it for me... and that assumes today's collection is good.. if not it's going to sit in the pans for a few months..

    I have tiny amounts of sap left in a few buckets. Only #1 and #2 have anything worth collecting. Will be pulling their spiles later. Think I've collected less than 400l sap this year.
    Been tapping since 2008.
    2018 - 17 taps/7 trees...819l sap, approx 28l syrup
    2019 - 18 taps/8 trees...585l sap, 28l syrup...21:1 ratio
    2020 - 18 taps/8 trees...890.04l sap...gave away about 170l, 30l snafu'd....23l total for me from approx 690l
    2021 - 18 taps/8 trees...395l sap, 12 l syrup
    2022 - 18 taps/8 trees....7 sugars 1 red due to #2 having surgery so had the season off....582l sap, 18.5l syrup
    2023 - 18 taps/8 trees...all sugars again. 807l sap, so far approx 14l syrup

    Brought in another 250 gallons this afternoon. Was really cloudy and little nasty looking but it made some of the nicest syrup I’ve made this year. All done boiling. Started pulling the taps this afternoon and will do the rest and cleanup this week as time permits.

    Season total was around 370L from 420 taps, or about .88L per tap. Definitely my poorest year since 2012 but still not as bad as I thought it was going to be a week or so ago. The last week and a half almost doubled my season total.
