    Well if your bottling sap then I’m sure it’s on the thin side most people bottle syrup. Lol I had to say it lol
    I’d get yourself a hydrometer to bring it to a final syrup. The temps can work but I’ve seen 221 and still not be syrup on the hydrometer. I use the temps to bring it to nearup then finish with a hydrometer. Not sure I’d go through the trouble of redoing it if it’s only 3l but you can’t hurt anything by doing it and practice makes perfect.
    225 taps 180 on vac 45 on natural gravity lines.
    2x6 drop flue with auto draw.

    And you bottled syrup...right?
    You can't always go by your thermometer mine is usually at 66.5 when my thermometer hits 221.

    I do. I tried using thermometer first time I ever bottled and let’s just say the next day I bought a couple hydrometers.
    When you get it using the plastic case it comes in I mark the plastic so I can tell if it’s been moved inside the glass tube. Only way I could think to check calibration is still good. Never had one move but it’s not a bad idea to keep an eye on.

    Friday night I was drawing off at 220.7. Off the evaporator.
    Without testing with a hydrometer temperature is not exact. When setting the temp draw off I usually test it with 2 different hydrometers just in case. Then set it. And put the other hydrometer away. As a spare just in case.
    Usually if you think your light you Probley are. It will still taste like syrup when it’s light. Sheeting off a spoon works too but is not exact. Only tells you if your close.
    The candy thermometers that have the metal backing are pretty inaccurate. The thermometer moves in it and you will get an off measurement.
    My wife uses hers for numerous baking stuff and has to calabrate it in boiling water first. Move it to where it hits 100 on the stainless and make sure it stays there. Then it’s calibrated.

    I stopped using cheap candy therms cause they're useless imnsho. I splurge and buy only Taylor therms, the Candy/Deep Fry therm for finishing, and the Instant Read therm on the evap....and I now have a fancy-*** Smokey Lake therm and cup so now I have no excuse for going over density :-)

    2019 - 18 taps/8 trees...585l sap, 28l syrup...21:1 ratio
    2020 - 18 taps/8 trees...890.04l sap...gave away about 170l, 30l snafu'd....23l total for me from approx 690l
    2021 - 18 taps/8 trees...395l sap, 12 l syrup
    2022 - 18 taps/8 trees....7 sugars 1 red due to #2 having surgery so had the season off....582l sap, 18.5l syrup
    2023 - 18 taps/8 trees...all sugars again. 807l sap, so far approx 14l syrup

    Yes syrup. Tired, long weekend lol
    I'll see how it settles up. May boil it up again. Have everything cleaned up so annoying to go at it again today.
