I have options of open yard type silvers/ sugars/reds and also mature maple woods...
I need to make more syrup for our family usage only( can be 10 taps up to 60 or more but my only problem is finding time to deal with collection if I do more than just my yard trees)

And my evaporator is large so it needs a decent amount to keep it rolling in the pan.
I'm tempted to just tap my yard trees soon and evaporate on my turkey fryer just so I can keep up with it with working my job 40hours...

Tap when you see plenty of upper 30 degree days in the forecast. Sap won't flow when the temps are just hovering around freezing.
2021: 28 taps. 18"x36" flat pan and dual natural gas burners.
2020: 31 taps. 3 full size steam table pans on a custom 6x water heater natural gas burner setup.
2019: 31 taps on silvers. Back porch gas cook top with 2 full size steam table pans. An amazing 14.9 gallons in my backyard!
2018: 22 taps on 9 silvers. Propane turkey fryer and full size steam table pan on electric stove. I made 4.25 gallons in my backyard!

yep, still a bit cold. i have a couple trees tapped just to see when they'll run and have had about two days of good sap so far in the last three weeks. the next week still looking cold, so hoping the week after we'll get the right temps.

I'm in central and we had temps in the teens the last week. I put in a tap when it was still cold and was told it was already running a little. If you are tapping a silver maple, do it ASAP. One false spring will put buds on and your tap is done.
