I was originally going to add up to about 100 new taps this year, now I'm not sure. My lines are in fairly good shape, some limbs down on laterals but none on mains.
I've been splitting more wood, not quite done yet. What I'm splitting is cherry which has been cut since 2018, and is high and dry.
I just packed the last batch of bourbon barrel aged syrup into bottles. That continues to be a best seller but while it accounted for over 50% of my syrup sales last year it look like it may end up at 45-50% this year. Early in the Covid lock down I had a flurry of sales for Amber and Dark syrup which may have tipped the balance away from the bourbon aged slightly.

Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
