    Default Buddy syrup vs commercial grade?

    Is buddy syrup the same thing as commercial grade? I collected some sap yesterday and now that it is closer to syrup, it has a popcorn smell. Apparently that means the trees have budded, so should I toss this syrup or will it turn into syrup that is good for baking? It seems pretty light in color right now.
    2021: 28 taps. 18"x36" flat pan and dual natural gas burners.
    2020: 31 taps. 3 full size steam table pans on a custom 6x water heater natural gas burner setup.
    2019: 31 taps on silvers. Back porch gas cook top with 2 full size steam table pans. An amazing 14.9 gallons in my backyard!
    2018: 22 taps on 9 silvers. Propane turkey fryer and full size steam table pan on electric stove. I made 4.25 gallons in my backyard!

    Buddy syrup smells like you are boiling dirty socks, not popcorn. It should be fine.
    Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
    Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
    Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.

    I'd keep going until you find the odor offensive. Then you need to decide if it is worth continuing as the cost to end result is not always worth it at this point.

    Tapping since 1985 (four generations back to early to mid 1900s). 200-250 taps on buckets and then tubing in the mid 90s. 2013- 275 taps w/sap puller 25 gal. 2014-295 taps w/sap puller 55 ga. (re-tapped to vacuum theory) 2015-330 taps full vac. 65 gal, 2016-400 taps 105 gal, 2017-400 taps 95 gal. 2018-additional 800' mainline and maybe 400 new taps for a total near 800 taps. 2x6 Leader WSE (last year on it) supported by a 250 gph RO.

    I haven't finished the syrup yet but so far it tastes sweet, no maple flavor. Since there is a chance it's edible, hopefully I can finish the batch tonight.

    You could save this syrup and blend it with later syrup that has more maple flavor.

    Is it real lite color? That might not have much taste. As suggested above, if that's the case, blend it with a better flavored batch. It takes very little darker syrup to darken and add flavor to real light grade syrup.

    If the sap is buddy the syrup will have a very astringent feel on the tongue,kind of leave a weird "rough feeling" on your tongue like a coating. Maybe "bitey" would be another way to describe it.

    If your steam smells like rotten socks, puke, or wet dog then your sap has SPOILED before you could process it. This usually makes a very light color and foam is hard to keep down.

    There is a difference between these two scenarios, take it from someone who produces many many many gallons a year and has had the experience of seeing and tasting both.

    My personal rule of thumb is I take a sip, if I go back for more in a couple minutes then it's good!!
