    What's the best way to clean the burnt sap from the pan?

    Vinegar and water. Heat and let it set overnight and scrub in the morning with a SS scrub pad.

    I agree, except not with a SS scrub pad, that will scratch the pan. Use a non-metallic scrub pad or a copper one, that is softer than the SS. If you scratch the pan, cleaning will be needed more frequently from then on.
    Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
    Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
    Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.

    A piece of copper pipe with the pounded flat works good as a scraper.
    Sugaring for 45+ years

    250 mostly Sugar Maples, 15% Soft Maples. Currently,(110on 3/16" and 125 on Shurflo 4008 vacuum, 15 gravity), (16,000 before being disabled)

    2012 Kubota with forks to move wood around

    Sounds like someone, not naming any names here, just became one of those true sugarmakers! Mainly elbow grease or mechanical tools if it really gets bad. BTDT. I have seen some bad ones. Hope the pan is still ok.
