    Hello All,

    I tried a search and didn't come up with much.

    I'd like to start a post with everyone's favorite Maple Recipe, from simple to complex.

    Yeah, there should be a pinned thread with favorite recipes...maybe if this gets loaded up the mods will do that.

    Also, when making normal pumpkin pies around thanksgiving, use maple sugar instead of white sugar. Makes it so much better it's hard to believe you'd want to make it any other way.

    I make a few toppings as well that are quite popular in our house.
    Maple balsamic glaze. 50/50 balsamic vinegar and syrup. Cook down to whatever thickness you want. Won't buy the balsamic glaze in the store ever again.

    Blueberries/strawberries. Add some syrup to berries, cook down/smash until desired thickness. Add on top of whatever.

    In my homemade spaghetti sauce that I can, I use syrup instead of sugar.

    Tacos; add some syrup. Syrup + peppers is a great combo.

    Good beef/venison kebab/stir fry marinade: 2T syrup, 2T soy sauce, 2T cider vinegar, 2t garlic powder, shot of Sriracha. I've also used this to season venison meatballs. A family favorite. Make more and thicken for a sauce too.

    2015 - Small operation. 25 buckets. One excited 5 year old and one 35 year old that feels 5 again.
    2016 - One year older. New Homemade 2x4 Arch, Smoky Lake Pan and looking at 52 maples, 17 box elders and 2 walnut trees.
    2017 - Shurflo 4008 hooked to 42 stingy silver maples and a few Norways. A couple buckets on sugars and Norways. 10 box elders.
    2018 - ...a few more taps.
    2019 - ...more taps on 3/16 gravity. This spiral is heading downward in a hurry.
    2020 - 4x400 RO - RB20 (uh-oh!)

    I've made maple nuts and maple popcorn, and both have been a big hit.

    Nuts are really easy. The popcorn is a little more finicky. First of all with the popcorn, you need a higher temp on the cooked syrup so that it crystallizes pretty quickly. Otherwise you might wind up having to stir the popcorn so long that you demolish it! But don't cook the syrup too long or it will crystallize too fast when you pour it on the popcorn, and you'll wind up with a few big lumps and not a nice even coating. Also, when making the popcorn I had to wind up cooking the popcorn on low in the oven for a little while, because when the sugar crystallizes it still has enough moisture in it to make the popcorn a little mushy. It just took maybe a half hour, and then the popcorn and sugar were nice and crunchy.

    I once tried baklava. It didn't work well - the syrup was too thin I think. I don't know if I needed to do something different, or if the different type of sugar between maple syrup (sucrose) and honey (glucose, fructose, etc) just makes it a no-go.

    I haven't done granola yet, but that's a no-brainer. Plenty of recipes here and elsewhere online for maple-based granola.

    My favorite maple recipe is pretty simple...1/2 shot of warm syrup direct from the evaporator and 1/2 shot of Capt. Morgan's Spiced Rum. For the adults only!

    Maple mojitos in the summer are pretty amazing. Use the syrup to replace the simple syrup.

    A friend of mine swears by maple Manhattans.

    Actually pretty much any cocktail that uses sugar or simple syrup can have maple syrup as a substitute. Maple syrup has a little less sugar by volume than simple syrup so you need to add a little extra if you like things sweet.

    Another huge hit is maple candied bacon. Simply slow roast the bacon in the oven on a cooking rack above a sheet pan. Drizzle syrup over the bacon before it goes in the oven. A few flake of red pepper or cyan adds a little spice to go with the sweet.

    There's this restaurant by me that makes a Maple Syrup/Carmel mix (looks like 50/50) for Pancakes and Waffles. Carmel is delicious and adding the Maple elixir makes it amazing, it's to die for...
    2020 1st season- 8 gallons of syrup
    2021 2nd season- 11 gallons of syrup

    I just made pecan sticky buns with maple syrup....
