    Default Best filter/canner for a flat electric stovetop?

    Uh oh - wrench thrown in at the last minute. I was planning to buy the new 9" CDL vacuum filter/canner and now that it finally came in, it turns out the bottom is not flush with the sides (see photo). Is gas the only way to heat up a container like this?

    2021: 28 taps. 18"x36" flat pan and dual natural gas burners.
    2020: 31 taps. 3 full size steam table pans on a custom 6x water heater natural gas burner setup.
    2019: 31 taps on silvers. Back porch gas cook top with 2 full size steam table pans. An amazing 14.9 gallons in my backyard!
    2018: 22 taps on 9 silvers. Propane turkey fryer and full size steam table pan on electric stove. I made 4.25 gallons in my backyard!

    Hmm. What about a slightly bigger pan (with flat bottom) and use as a double boiler. The spigot would be a problem, unless the pan were really shallow

    That was my though too for a little bit, but the drawoff valve would get in the way. The pan would have to be 1" tall and boiling water with that shallow of a pan seems like a mess.

    Is that something you just purchased and received like that? If so, they should replace it.
    2004 - 2012 2x3 flat pan 25 to 60 taps
    2012 2x3 new divided pan w/draw off 55 taps
    2018 - didn't boil surgery - bought new evaporator
    2019 new SML 2x4 raised flue high output evap. 65 taps
    made 17 gal. syrup
    2020 - only put out 53 taps - made 16.25 ga.l syrup
    2021 - Didn't work out
    2022 - 25 taps on bags / 8 taps on 3/16's line - late start

    It's designed that way. I think it is designed for use on a gas burner. But I did a test by putting a pie pan upside down on my kitchen stove and it got hot, so I think this will work fine. It won't work on the induction size, but luckily my stove has regular electric and induction.
