    Default Granulated Maple Sugar

    Hi:

    Is it possible to make your granulated sugar to dry? I mean for it to be stable, doesn't it have to be completely moisture free?
    I was just surfing around and noticed in the New York Maple Producers confection note book it saying it needs to have moisture. Page 85.

    I have never left moisture in my sugar for fear of fermentation or spoilage.

    What do other producers do?

    I don't know that their is a legal definition for maple sugar as far as rules to sell by or anything like that. I know some people that make 2 kinds, one more like brown sugar and one more like table sugar.

    I have not made very much but what I do I get dry. I've kept in on the counter in a jar for 6 months with no problems
    125-150 taps
    Smokey Lakes Full pint Hybrid pan
    Modified half pint arch
    Air over fire
    All 3/16 tubing
    Southern Ohio
