    Default sediment,sugar forming or ????

    Have some cloudiness forming at the bottom of my bottles and am not sure what it is? Any ideas? I feel this is just sugar forming but being a first year producer Im not sure. I had this in a small local store and didnt like how it was looking so I pulled it from the shelves. Ask me for any info that may help you determine what it is. I do bottle with a smokey lake canner. I heat the syrup to 185-190* before bottling. I did get crystallized sugar out of a quart bottle here at home. Thanks in advance! Ken

    I also ran the hot syrup (right off the evaporator) through a 7" filter press.

    From what I can see - what little is visible in the pics - just plain ol niter. Is it really worth pulling from shelves and rebottling? Not to mention having to reheat, use new caps on the bottles etc?
    Been tapping since 2008.
    2018 - 17 taps/7 trees...819l sap, approx 28l syrup
    2019 - 18 taps/8 trees...585l sap, 28l syrup...21:1 ratio
    2020 - 18 taps/8 trees...890.04l sap...gave away about 170l, 30l snafu'd....23l total for me from approx 690l
    2021 - 18 taps/8 trees...395l sap, 12 l syrup
    2022 - 18 taps/8 trees....7 sugars 1 red due to #2 having surgery so had the season off....582l sap, 18.5l syrup
    2023 - 18 taps/8 trees...all sugars again. 807l sap, so far approx 14l syrup

    Looks like niter (sugar sand). It likely means you did not do a perfect job filtering. Read threads on this site about how to filter using a filter press. Then ask all of the questions you may have.
    Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
    Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
    Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.

    If your bottler is propane/open flame I’ve found it very important to intermittently stir the syrup while heating it up or you’ll get crystals and possibly niter from over heating some of the syrup. It looks like niter to me.

    Thank you so much for the input. I use a water canner. I heat to about 185-190. Is this too high and maybe the cause of the niter? Ken

    You shouldn’t have any issues bottling at those temps though I try to do 180-185. As others suggested, do some searching in the filtering forum and I’m sure you’ll find some info on whatever 7” press you have. When filtering let the syrup run through the press for a couple minutes to work in all the DE before you start bulk storing or putting it in the bottler.

    I think its sugar sand as well, but I would check a couple of bottles to make sure your brix level is spot on.

    Could very well be some DE that passed through the last paper of your filter if everything was not coated before keeping the filtered syrup. That stuff can be very fine and not immediately visible until it starts for fluctuate and precipitates out.
