Default Storing syrup in 5 gallon pails

I usually bottle all my syrup at the end of the season but I thought I would store some in pails for now until I figure out what Kind of orders I get. What’s the trick to doing that? Same as bottling where you heat it to 190 and then seal it into pail? I thought about just putting them in the freezer.

Stored in a freezer will do fine. If not they must be heated to over 190 , filtered and then put into clean containers (food grade). When you open them to pack into retail containers they only need to be heated to 180+ but not over 190. If the go over 190 you might need to filter again.
Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
