    Default Rebottle last year’s syrup

    I have some syrup from last year in half gallons that I’d like to put into smaller containers to give to friends and neighbors. What’s the best way to rebottle this so that it will keep. I’m concerned about crystallization and niter.

    Heat syrup SLOWLY to 185-190 - do NOT go over 190 or you are making more nitre. If your syrup is already crystal-free then it should remain so. Normally you have to go like 225 for crystals, and you do not to go anywhere near 225 for rebottling.

    BTW I don't use plastic containers, I am going to assume you are using glass jars. Decant carefully into clean sterilized containers and new lids. If you're using glass, fill to the very brim, tighten lid to fingertip tightness and lay on its side (I use an aluminum tray in case of any leaks) so the seal forms. And leave it. Once it's cooled it'll be safe to set upright.

    2018 - 17 taps/7 trees...819l sap, approx 28l syrup
    2019 - 18 taps/8 trees...585l sap, 28l syrup...21:1 ratio
    2020 - 18 taps/8 trees...890.04l sap...gave away about 170l, 30l snafu'd....23l total for me from approx 690l
    2021 - 18 taps/8 trees...395l sap, 12 l syrup
    2022 - 18 taps/8 trees....7 sugars 1 red due to #2 having surgery so had the season off....582l sap, 18.5l syrup
    2023 - 18 taps/8 trees...all sugars again. 807l sap, so far approx 14l syrup
