    Default Burned flat filter pan - OK?

    Over the summer I taught my daughter and a friend to use my stainless flat filtering canner bottler, and should have watched closer, as they burned the bottom over propane flame. Not their fault, i should have explained how to watch for that. It's a 12"x12" stainless pan. Anyway, I thought soaking in a hot vinegar-water mix for a day to few days would be enough to remove the burn, but there's still a patch around 3" x 5" I can't get out. I used the vinegar water, let soak 1-3 days, then scrubbed with a soft sponge and got some of it, and then a teflon spatula to get more of it. My wife suggested soaking in vegy oil which she's used for kitchen pans. Again it helped a little. But i've got this remaining 3"x5" patch (see photo) and wondering if:

    1. other methods to safely remove the rest of the black without scratching the stainless surface
    2. if i leave it as is, will it affect my syrup - taste or otherwise? I re-bottled some with this burn in it, and thought it didn't taste quite as good, or quite as "clean" maple. But i'm not sure.

    2022: 200 taps. I lost 50, added 100. Having fun but short season?

    If you can pound flat and sharpen a piece of copper pipe and lightly scrape it under water or vinegar it will come right off. I read it on the trader and it works great, will not scratch the stainless, just don't push to hard.

    I second the sharpened piece of copper pipe it makes a nice scraper. An 8 inch long or so piece of 1" copper pipe can be made into a very handy scrapper tool.

    Pound one end flat, then file or grind an edge into it. Ive used it with good success on my steam table pans as they always get a ring around the rim of the pan because my pan sit in the fire.

    Try oven cleaner, just make sure to rinse really well when done.

    In the picture it looks like you already have scratched it some. Be very careful and try the copper scraper. Just be sure not to use a corner point, just use it with the scraper flat over it's width and have some slope but not steep.
    Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
    Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
    Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.

    if you don't want to flood the pan with vinegar to cover the burn spot, cover that area with two or three thicknesses of paper towel and soak that with vinegar, keep that wet for a few days and then try the scraping trick the other guys here have mentioned.

    Thanks for these ideas. I’m intrigued by the copper
    Pipe idea but lack the pipe and tools needed at the moment. I’ll try the vinegar and paper towels. Also read online to try baking soda and water mixed then boiled 5 minutes. Then scrub. I’ll

    You can also try citric acid instead of the vinegar. You can buy it as a powder in the canning section of the grocery store. That way you can mix it up yourself a little stronger than the vinegar.

    They make a cleaning grade vinegar than works much better then the regular cooking vinegar. basically just a stronger version. i find it at Walmart.

    I have seen way worse. I would have grabbed some brillo pad type thingy and went at it. Now they are officially sugarmakers!
