I'm not in your area, but I tap early using CV2 or Zap Bac spouts. I try to have everything ready by the first good run which follows a good freeze and then warm into the 40's during the day. the sap can and does flow in the 30's but not very well.
With 40 taps, you can do the tapping on very short notice so you don't need to plan as far ahead as producers with thousands of taps, or even hundereds.
Watch your local forecast and when the 10 day looks good, put your taps in.

Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
