    Default reskin in stainless

When I built my Davey Jones style ( 2x3) evaporator 8 years ago the budget and the fact I didn't know if I would make syrup more than one year, I skinned it with galvanized sheet metal. After this season its time to reskin. Can someone tell me what kind of stainless sheet metal to use please.

    Thanks, Georgelineman

For an arch I bet any stainless would work. On my homemade arch I used salvaged stainless from an aquatic pool. Its a little thicker than 16 ga and is holding up great.
