    Default Aluminum vs stainless steel for steam hood

    Ive seen things made here that make ME cringe, and I’m a recycler at heart. I need a steam hood and lack metal braking equipment. Using aluminum is tempting for a steam hood, but I wonder if I will regret not just using stainless. What’s the current spec and will that carry forward or will aluminum become a pariah metal like galvanized is now?

    I have an aluminum hood over the flue pan and a SS hood over the syrup pan.
    Both were made by Leader.

    The aluminum hood is maybe 5 years old and in the time since, I haven’t heard of any movement towards ridding ourselves of aluminum in the production process.

    I wouldn’t have it in prolonged, direct contact with the sap or syrup due to a potential off flavor, but using it for a hood? <shrug>

    As far as I’m aware, Leader will still fab an aluminum hood for those that want one.

    I imagine we can all still safely use a galvanized steam hood couldn't we? It's not coming into contact with the syrup, and I doubt it would leach of zinc fumes at only slightly over boiling point.. No?
