    Default Boiling my measly (under) 5 gallons

    Hard to believe this is all I've gotten from my taps. Next 10 days, nothing below 31 for the lows. I'm wondering if my season is over before it's started. Though, since my taps haven't been in too long, I'm not pulling them. Most of my sap is from one tree. A few taps are dripping at less than a snail'a pace (not even an inch over a couple days), but yellow-tinted, yet clear consistency. These are all trees I've tapped in the past, and while some have been runners and some have been more sluggish, this is not normal.

    Using the propane on the deck for the first time. Even with small quantity, still smells great. Sap between 1.75 and 2.75 when collected.

    Hoping that it won't be a one small bottle season.

    Intent to build a new barrel evaporator with my son this summer. Still don't weld. We'll see how it goes.

    We need a few really cold nights to get things started again. Hang in there -- March can bring some big storms and very cold temps.

    I tapped very early this year and have been watching my trees here in so. NH. So far, no signs of buds. I did collect a bit yesterday, but only about 5 gallons from 16 taps.
    2024 - 16 taps - buckets on our best producing trees, still boiling on a block arch with slight modifications/refinements over the years.
    2021 - 25 taps - all buckets
    2013-2020 - 30/41 taps: discovering which trees were the best producers
    2012 - First year - 21 taps in our backyard - block arch evaporator with 3 steam table pans!

    So, I may be griping, but, I did just finish with this... still a thrill. Good color, and tastes great. Too little to use the hydrometer. Might be light (sugar), but I'm sure it's not going to last long enough to worry.

    That is going to taste soooo good on pancakes!

    next couple weeks look to be mid 20's overnight and mid 40's during the day, so it should pick up. i tapped 2 weeks ago(12 trees) and have gotten about 25 gallons of sap. first 11 only made 1 qt of syrup, finishing up 15 or so gallons tonight on the stove. kids have already gone through half of one of the half qt bottles!

    Not using my own, but from a producer that sells at my farmer's market, today I made bourbon barrel-aged maple ice cream. Yum.
