    Default Maple candy

    Am I able to use dark syrup to make candy with? Have about 5 or so gallons of really dark syrup. Wondering if that can be made into other products?

    Results will vary with darker syrup when making confections. Invert sugars tend to be higher which can affect product. I’m not saying don’t try.

    I've never understood this inverted sugar idea or process. Is there an easy explanation?

    All syrup is not created equal. Early syrup tends to make better candy and sugar products. Generally later syrup (darker) may not have the ability to make sugar crystals. Your mileage may vary. Best thing is to boil a pint of your syrup to 260F remove from heat and stir if it makes sugar your good to try other products too.
