On a mini system, go for it. As long as the tree is 36" or more 3 taps are ok. Back when I had a similar set up with buckets I had a few with 3 taps on a 5 gal jug. They got emptied 2x a day if the sap was running good. To do it, I used the first tap drop to go into the jug, then I had one or 2 more Tee into it just like they do on a lateral. Once I got vacuum I no longer put 3 taps, 2 became my max then.

Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
