Default class A chimney or single wall?

I have read some past posts, but wanted to get experienced opinions on my chimney questions.
I am finishing up my sugar house now and trying to plan the chimney
I will be setting up new evaporator (likely a 2x6) but will likely be going bigger in the near future
    A) how do you run your chimney thru the roof?. single or double wall and what kind of clearance to combustibles
    B) Size? what are the typical size vent pipe for larger evaps (would look at 2x8 3x8 or 2x10) has anyone put a larger roof jack for ease of future potential expansion.

for reference roof is 24ga corrugated with purlins 24' OC

any guidance recommendations very much appreciated

I have a 2x5 Smoky Lake Corsair arch - installed with the base stack, 2 - lengths of 8” stainless single wall then adapted to 8” Class A. I have two sections of the Class A - one that goes through the roof jack and the second above the roof.
Used it last season and it worked very well.
Base stack is hot - 700-800 degrees, but in the span of the 2 - lengths of 8” it cools quite a bit.
If you plan to increase the size of the evaporator, there will be alterations needed as you go - roof jack size, roofing, clearances, etc.
    Hope this helps you.
