    Default Candy with a gear pump cream machine?

    I know Sunrise makes a machine that will do both cream and candy; however, has anyone tried to make candy with their gear pump cream machine? What are the RPMs of the two machines? What are the motor sizes? Is it possible to do? The concept seems doable. Thoughts?

    I doubt it would be doable without the water jacket. I have a sunrise machine and the temperature has to be at least 150 or it'll set up.

    Randy are you located any where near Bear Pond road? My cousin Marc and Cheryl run a sugar House there. Id love to come see your operation when the season gets going. I usually take a trip to see Marc every year. My great grandfather Oscar started that operation many years ago.

    I accidentally boiled my cream 7 degrees too high the very first time I tested my homemade cream machine, and it was a disaster. Instead of turning into cream it turned into candy, clogging up all of my pipes in under a minute. Had to take it apart and unclog/clean. Hopefully my two minute post saves you some time...

    I use to make cream on my candy machine, worked fine just very very slow

    You need a heated water jacket to put and keep the candy in a state of suspension. Without it as soon as you start agitating the syrup it begins the crystallization and setting process.
