right now I have a 2x4 continuous flow pan and I was looking at adding a 2x2 finishing pan. then I thought about adding 2 2x2 finishing pans. what would be the benefit of have 2 2x2 pans instead of 1?

About 4 gph per pan - depending on wood, draft, firing time, etc.
