    Default Last seasons cream.

    I have a Tupperware container full of maple cream in the refrigerator. I made it last April but it turned out grainy, so I left it with the plan to add more syrup and re-boil and stir to the correct consistency. Well here we are almost a year later and I never got around to re-processing it. Since it's been in a sealed container in the fridge, could it possibly still be usable? Cream is so much work, I hate to dump it out.

    Cream has a short shelf lift, but it can be re-processed. Mix it into a new batch and try again.
    Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
    Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
    Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.

    My experience with cream if you didn't let it cool to room temp before stirring is the reason for the grainy texture.
    The good thing with syrup ,you can make a number of confections.syrup-cream,cream -molded sugar,or molded sugar to granulated sugar..It never goes to waste..

    Take it to 244 and make candy. Take to 260 and make crumb.

    That's good to know. I think I will boil some new syrup and throw in the old cream in the pot and try again. Thanks.
