Well it's been freezing cold for about 2 weeks where I am in New York so and I seen that it was going to warm up for four days to about 45-50 degrees.... So I was itching to get a tap out because I've never done it before so I just Tapped one tree just to see if I'd get anything and I woke up the next morning with a gallon of sap.. I boiled it down and it started getting darker and darker then switched it to a smaller pot and it started to bubble alot and I turned the heat down a little and went upstarirs to get something... Went back down to the garage where I was doing the final boil and I had boiled it too much! It got these huge bubbles of thick syrup so thick that I could barely get it out of the pan and when I did with a spoon it dried up real fast so I decided to roll some up into a ball and make maple candies which were pretty tasty. Wanted to make syrup but all in all it was somewhat of a success! I have to keep a closer eye on things next time so I don't over cook it!
