    Did you put anything under your pans where it sits on the steel to stop the smoke from coming out.
    Blanket insulation or anything?

    Yes, I cut 2" wide strips of Ceramic Blanket insulation and used it for a gasket. Tolerates 2300 degrees and also did a nice job of sealing in the smoke. It also worked like a "crush" gasket as the weight of the flooded pans pretty much levelled themselves.
