    Default Is it ok to leave finished syrup in a kettle overnight?

    I have 5 gallons of finished syrup in a large stainless kettle. Too big to get into a fridge or freezer. Can I leave this covered in my shack overnight and can it tomorrow night? What about canning it Saturday night? I don't want to mess this up or do anything sketchy. So I'm checking in to see what you guys do. I have other stuff I need to do and if I have to can this tonight it's gonna really mess up my schedule. I've never made this much syrup in a day so I'm not sure what is normally done in this circumstance. Thanks guys!
    More taps than the year before. Bigger shack than the year before. Leader Patriot 2x6 w/hood. 3-post Dolly, but still too much sap and not enough wood or time.

    Yes, it'll keep just fine for a few weeks if it is near the proper density. You will have to reheat it to pack it in containers. Be sure it gets to 180-190 deg F, but not higher, or you may form niter. It may darken somewhat when you reheat it.

    In addition to Dr. Tim's words, by letting your finished syrup set a day or two it allows all the sugar sand to settle to the bottom. When it is time to reheat the 5 gallons to bottle, gently pour the settled syrup into another container. You will see the dark streak of sugar sand begin to appear in the stream of clear syrup as the pot empties. Stop pouring at this point. Filter and bottle the clear stuff, save the dregs for your own use. Your filtering will go a lot easier.
