    Would something like these be OK to use?

    I ask because they are the right shape and are easy to come by at box stores, but most of them have some kind of coating. They say good to 450F for baking...but I intend to use them on a block arch over open flame.

    I wouldn't use anything that has a non-stick coating, especially over an open flame. Stick with stainless steel. If you have trouble finding that, you could also consider a large enamel turkey pan. Those are plentiful in stores. Welcome to the forum!
