    Default Finishing sap

    Small operation 2-3 hundred gals sap / year. How long can almost finished sap be stored or collected before final finishing?

    You should bottle finished Syrup right away so it will last indefinitly. Storing sap is a differnt matter. If you keep it out of the sun and cold it will last a few days. Later in the season this gets tougher. I pack around both of my collection tanks with snow during the season.

    With "almost finished" ( 5-6 degrees above boiling point of water) syrup it will keep OK for maybe a week. Keep it cold and maybe 10 days.
    It is still better to finish it ASAP for the best results, like same day or next day.
    Dave Klish, I recently bought a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
    Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
    Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
