I have a potential new customer who is a baker and says her vegan customers would be opposed to my use of Atmos defoamer as it may contain a small amount of animal products. She recommends coconut oil. Has anyone here used it as a defoamer? Do you use a similar amount? Does it affect the taste?
I would almost have to use it in my first batches of syrup because the atmos might be staying in the flue pan for who knows how long.
