Do you mean for like a commercial kitchen area? For paying members? Producers would bring raw product and have it converted to finished. Help. I'm stupid about what this would be. Thanks

ok so I not in all the details about this, but let me do my best. From my understanding at this point this facility would be for....now bear with me.

for 1 example say you sell 3bbls of syrup in small containers and don't have the resources, or just don't want to take the time to do so, well this facility would have a bottling line, to blend to the proper density, filter, heat, bottle, label, case it, crate it, if if you so wish arrange a pick up by a carrier
    or
say highlandcattle has created a bbq sauce and want to sell it retail, or across state lines and don't have the access to a 20c to do this, or your volume is too high then you would sign some non disclosures and give your recipe to this facility to blow up your mixing ratios and bottle and label your bbq sauces for you.
    or
say your aunt gerty has an awesome peach cobbler sauce that she want's to market...this place could possibly bottle this up for her.
It's much more broader than just Maple, but the hopes are that Maple can be the incubator to get the place started and expansion from there. I Hope this helps a little

As you describe it, this sounds like something that is already in central Madison County, Nelson Farm. It is linked to Morrisville College and run by M.A.C. (a dedicated corp. working for the college), which both of my sons work for. They do exactly what you mention, you can have them produce a recipe you have in any food product, sauces, dressings etc.
The now retired manager of Nelson Farm (Bob Evans) was the main speaker on Friday evening at the Verona winter maple conf. in Jan a few years ago. I have visited their retail store but have never hired them, but a friend just had them price up for producing her Guacamole recipe.
I wonder how this facility you mention might differ from what Nelson Farm already does, except that they might be closer to the larger maple producers than Central Madison County, in Nelson, NY on Rt. 20, halfway between Morrisville and Cazenovia.
Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
    After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.

Yes very much the same as Nelson Farms to my understanding. yes to be closer to the northern more maple, and general ag producers. I also know that Jefferson county has been talking about an idea of a Northern Food Hub being just off of Interstate 81. So in my mind this facility would have it's place, but hey that's what the meeting is for
