    Default 60 Second Maple salad dressing......YES

    Kudos to my Mrs. for knocking it out of the park.

    60 Second Maple Salad Dressing:
    - 1/4 cup maple syrup
    - 1/4 cup red wine vinegar
    - 1/2 cup 100% extra virgin olive oil
    - 1 tablespoon Dijon mustard (or substitute yellow mustard)
    - salt and pepper to taste

    Shake well and pour over your favourite salad.

    Prepare to have your taste buds dancing.

    I add a pinch (or two) of crushed red pepper flakes to mine. Not much zing the first day but after a couple of days in the fridge you get a nice little kick!
    1998 - Tapped 7 trees in the woods behind Northland College, boiled on dorm stove = 1 quart
    2012 - 25 taps (8 proper buckets, 17 plastic milk jugs), boiled on concrete blocks/chaffing dishes = 5 quarts
    2013 - 50 buckets, 2 x 3 WF Mason pan/arch = 6 gallons
    2014 - 55 buckets, 2 x 3 WF Mason pan/arch = 8 gallons
    2015 - 65 buckets, 2 x 3 WF Mason pan/arch = 9.5 gallons
    2016 - 120 buckets with draft horse powered collection, 2 x 6 Leader WSE evaporator (used)
