I add a pinch (or two) of crushed red pepper flakes to mine. Not much zing the first day but after a couple of days in the fridge you get a nice little kick!
1998 - Tapped 7 trees in the woods behind Northland College, boiled on dorm stove = 1 quart
2012 - 25 taps (8 proper buckets, 17 plastic milk jugs), boiled on concrete blocks/chaffing dishes = 5 quarts
2013 - 50 buckets, 2 x 3 WF Mason pan/arch = 6 gallons
2014 - 55 buckets, 2 x 3 WF Mason pan/arch = 8 gallons
2015 - 65 buckets, 2 x 3 WF Mason pan/arch = 9.5 gallons
2016 - 120 buckets with draft horse powered collection, 2 x 6 Leader WSE evaporator (used)
